Spicy Pumpkin Soup

  • 2 28-30 oz cans pumpkin
  • 1 quart good chicken broth
  • 1/4 cup butter
  • 1/2 cup onion
  • 3 tbsps flour
  • salt & pepper to taste
  • 1/2 tsp ground Coriander
  • 1/2 tsp Ginger
  • 1/8 tsp Cayenne Pepper(more to taste if needed)
  • 1/2 cup cream
Directions

Place butter in soup pan; add onion and spices, sauté for 3 -4 minutes until fragrant. Add flour and cook the roux for 5 minutes. Add ½ of the broth and blend with immersion blender. Then cook 5 minutes, add pumpkin, remaining broth and cream. Bring to a simmer and correct seasonings to taste.
