Ingredients
  • 1 Large egg
  • 2 tbsps Mayonnaise
  • 1 tbsp Chives or Scallions, chopped
  • 1/2 tsp Cilantro, chopped
  • 1/2 tsp Ginger, grated
  • 1/2 Lime zested
  • 1/2 tsp Sesame Oil
  • Hot chili paste (sambal olek)- as much as you want or to taste
  • 1 tsp Baking powder
  • Pinch of White pepper
  • Pinch of Salt
  • 1 lb Crab meat
  • 1 cup Panko bread crumbs
Directions

Recipe by Chef Derek Ridgeway

Combine all of the ingredients from the egg through to the salt, in a large bowl. Mix together well. Then add 1 lb. of crab meat. Mix gently. Form into cakes. Pour Panko Crumbs into shallow dish. Dip cakes in panko crumbs just before cooking. Cook until crispy on the outside and serve immediately.
